Toss gently and serve. 2 main dishes Mushroom and polenta dish1 cup polenta1 cup semolina1 tsp salt40g unsalted butter60g parmesan, finely grated Olive oil50g unsalted butter4 green onions, sliced1kg mixed exotic mushrooms, sliced1 clove garlic, finely chopped1 tbsp lemon juice2 tbsp flat-leaf parsley, chop! ped 100mL dry white wine300mL pouring cream MethodFor polentaBoil 1.5 l! itres of water in a large saucepan, pour in polenta and semolina in a steady stream, whisking constantly. Add salt and cook over a low heat for 25-30 minutes until thick. Stir in butter and parmesan, then pour mixture into a greased 18 x 28cm tray and cool.Heat 1 tablespoon of olive oil and half the butter in a frying pan, add onions and cook for 1 minute, then add half the mushrooms and garlic and cook until mushrooms are soft. Remove from pan. Heat a further tablespoon of oil and remaining butter in the same pan, add remaining mushrooms and cook until soft. Return first batch to pan, stir in lemon juice and parsley and cook for 1-2 minutes, add wine and cream and cook until slightly thickened.Cut cold polenta into wedges, brush both sides with olive oil. Instead of eggs in the mix you can use applesause (3 tbsps per 1 ! egg) or blended silken tofu (usually found in a box in the produce section near the herbs, garlic, mushrooms and things like that) 1/4 cup of blended tofu (just stick it in a blender til it's smooth) per 1 egg. Raye Tredennick: Tofu, Soy, beans, eggplant. Those are mostly your meat. It's mostly a fruit and veggie diet and unlike vegetarians dairy products aren't allowed. So no milk chocolate, and it gets really tricky with other baked goods. This diet is doable, but not easy. That's why I'm vegetarian :) I love cheese too much

I feel better than I have in YEARS. 10. Respect for the environment. I decided to become a vegetarian because people do NOT *need* to eat meat. Meat is so hard on your system- it basically rots inside there because the body can't break it down. I love all animals, and they do not deserve to die just to be on someone's dinner table. It sickens me to see all of the raw meat in grocery stores-digusting. I can live quite well on my vegetarian life and I'm not missing a thing. I have a lot of respect for vegans, but I love dairy products too much. And, as Morrissey says, "I don't eat my friends" (ANIMAL friends, people! Get your mind out of the gutter!)
