Rosie Travino: Usually it's any food that is not local to that particular region. For example Southern soul food is ethnic cuisine in New York, but wouldn't be in say, Alabama. Ethiopian restaurants are ethnic food restaurants in the US, but obviously wouldn't be in Ethiopia. etc etc. For the same reason, it's considered a delicacy; if it's not common to find it in that area, it's harder, to find and more expensive.

"That's Mexican food", or "ethnic, precisely Mexican."Think of it like this: You are a totally unique person. Just like everyone else.

For example, French food is not ethnic--or is it? Also, in Ethiopia, when they go for an American hamburger, they aren't eating ethnic food, even though it is foreign to them.
